Start by preparing the pie filling. Wash and dry the peaches thoroughly. Peel the skin from the peaches and slice, removing the pit. Dice into small cubes. In a medium bowl, gently combine the peaches with the granulated sugar. Cover and place into the refrigerator for about an hour to allow the juice to release from the peaches
Drain the juice from the peaches into a heavy-bottom saucepan and whisk in the cornstarch, ground cinnamon, and salt. Ensure the mixture is well combined.
Cook over medium-low heat until the mixture starts simmering. Stir continuously and cook for about 2 to 3 minutes until the mixture thickens into a syrup. Stir in the lemon juice, almond extract, and vanilla extract, remove from heat. Fold in the peaches.
Prepare The Air Fryer: Preheat the air fryer to 350 degrees F, air fryer setting. Spray the basket or tray with cooking oil to prevent the pie from sticking to the basket/tray.
How To Assemble The Air Fryer Peach Pies: Remove the pie dough from the refrigerator. Unroll the pie crust on a flat, lightly floured surface. Then cut the pie dough once in half horizontally and once in half vertically.
Use a pastry brush to coat pie dough in egg wash liberally. Scoop one to one and a half tablespoon of the homemade peach pie filling into one of the dough sections.
Fold one side over the other, making a pocket shape, and press the ends together with a fork to seal. Repeat this for all of the dough sections.
Brush the tops of the pies with egg wash using a pastry brush, and place them into the air fryer basket or tray. Air Fry for 10 to 15 minutes, turning halfway through the cooking process.
Remove from the air fryer and sprinkle with the raw, turbinado, or demerara sugar.
