Air Fryer Peach Muffins – soft, fluffy muffins loaded with sweet, juicy peaches. Quick and easy to make, perfect for breakfast, brunch, or a tasty snack.
Ingredients
1/2cupbutter, room temperature
1/2cupdark brown sugar
1/4cupgranulated sugar
2largeeggs
1/2cupGreek Yogurt
2teaspoonspure vanilla extract
1 3/4cupall-purpose flour
1teaspoonbaking powder,
1teaspoonbaking soda
1/2teaspoonground cinnamon
1/8teaspoonground allspice
1/2teaspoonsalt
2tablespoonsmilk
1 3/4cuppeaches, peeled and diced
Instructions
In a large mixing bowl, cream the 1/2 cup butter, 1/4 cup granulated sugar, and 1/2 cup dark brown sugar, until fluffy. Whisk in the 2 teaspoons pure vanilla extract, 2 large eggs, 1/2 cup Greek Yogurt, 2 tablespoons milk and mix until well combined.
In another bowl, add the 1 3/4 cup all-purpose flour, 1 teaspoon baking powder1 teaspoon baking soda, 1/2 teaspoon ground cinnamon, 1/2 teaspoon salt and 1/8 teaspoon ground allspice.
Fold the dry mixture, into the wet mixture. then slowly fold in the diced 1 3/4 cup peaches.
Spray your muffin tin with non-stick cooking spray and fill each cup about two-thirds full with batter. Place the muffin pan in the air fryer basket, set the air fryer temperature to 320 degrees F, and set cook time for 12–15 minutes until a toothpick inserted in the center comes out clean.
