Air Fryer Mini Taco Boats

Description

Crispy, edible mini taco bowls filled with seasoned beef, melty cheese, and fresh toppings — ready in 15 minutes with the help of your air fryer.

Ingredients 

  • 1 cup iceberg lettuce, shredded
  • ½ cup Mexican cheese, shredded
  • 1 lb lean ground beef
  • ¼ cup sofrito
  • 24 mini taco boat shells, 2 boxes
  • Pico de gallo, or salsa of choice
  • Fresh cilantro, for garnish
  • 2 tablespoons taco seasoning
  • 1 cup cilantro-lime sour cream
  • 1 tablespoon olive oil

Instructions

  • Heat a frying pan over medium-high heat with the olive oil. Add the ground beef and break it into small pieces. After 1 minute, add the taco seasoning and brown the beef for 5 minutes. Stir in the sofrito, lower the heat, and simmer for 5 minutes.
  • Preheat the air fryer to 390°F for 5 minutes.
  • Fill each taco boat with about 3 tablespoons of taco meat and top with a pinch of cheese.
  • Place the boats in the air fryer in a single layer and cook at 390°F for 5 minutes.
  • Remove and top with shredded lettuce, pico de gallo, and cilantro-lime sour cream.
  • Garnish with fresh cilantro and serve immediately.
