Description

Tender, juicy air fryer lamb cutlets with a crispy herb crust, ready in about 22 minutes with just 6 simple ingredients — an easy weeknight dinner that tastes gourmet.

Ingredients

  • 4 lamb cutlets
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste

Instructions

  • Preheat the air fryer to 400°F (200°C) for a few minutes.
  • In a small bowl, mix the olive oil, rosemary, thyme, garlic powder, salt, and pepper.
  • Brush the seasoned oil over both sides of each cutlet until evenly coated.
  • Arrange the cutlets in a single layer in the air fryer basket without overcrowding, cooking in batches if needed.
  • Air fry at 400°F (200°C) for 8–12 minutes total, flipping halfway, until they reach your desired doneness.
  • Check with a meat thermometer: 130°F (54°C) medium-rare, 140°F (60°C) medium, 150°F (66°C) medium-well.
  • Rest 3–5 minutes so the juices redistribute.
  • Drizzle with lemon juice, garnish with fresh herbs, and serve.

Notes

  • Cook time varies with cutlet thickness and air fryer model — always confirm doneness with a thermometer.
  • Marinate ahead for extra flavor.
  • The USDA recommends cooking lamb to 145°F (63°C) with a 3-minute rest for whole cuts.
