Arrange the cutlets in a single layer in the air fryer basket without overcrowding, cooking in batches if needed.
Air fry at 400°F (200°C) for 8–12 minutes total, flipping halfway, until they reach your desired doneness.
Check with a meat thermometer: 130°F (54°C) medium-rare, 140°F (60°C) medium, 150°F (66°C) medium-well.
Rest 3–5 minutes so the juices redistribute.
Drizzle with lemon juice, garnish with fresh herbs, and serve.
