1lblamb chops, loin or rib, about 1–1½ inches thick
2tablespoonsolive oil
2tablespoonslemon juice
1teaspoonfresh rosemary, chopped
1teaspoonthyme
1teaspoonoregano
1teaspooncoriander
1teaspoonsalt
2clovesgarlic, minced
Instructions
In a large zip-top bag, combine the olive oil, lemon juice, rosemary, thyme, oregano, coriander, salt, and garlic. Seal and shake to blend.
Add the lamb chops to the bag, press out the air, and turn to coat. Refrigerate at least 1 hour (4–8 hours for deeper flavor).
Preheat the air fryer to 400°F for 3–5 minutes. Line the basket with a parchment insert if desired.
Arrange the chops in a single layer with at least 2 inches between each. Air fry at 400°F for 15 minutes, flipping once halfway through, until the internal temperature reaches 135°F for medium-rare.
Rest the chops 3–5 minutes before serving. Finish with a squeeze of fresh lemon.
Pull the chops early and let them rest — carryover heat keeps cooking them. Target temps: 125°F rare, 135°F medium-rare, 145°F medium, 160°F well-done.
