Description

These Air Fryer Jerk Pork Skewers feature juicy pork tenderloin coated in a bold coconut-jerk seasoning and cooked to perfection in just 7 minutes. Served with a fresh black bean mango salsa, this easy Caribbean-inspired dinner comes together in about 30 minutes.

Ingredients 

Skewers

  • ¼ cup shredded coconut
  • 1 tablespoon jerk seasoning, homemade below or store-bought
  • 1 pound pork tenderloin, cut into 1½-inch chunks
  • 1 tablespoon vegetable oil

Black Bean Mango Salsa

  • 1 mango, halved, peeled, pitted, and chopped
  • 15 ounces black beans, drained and rinsed
  • ¼ cup finely chopped red onion
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 tablespoon chopped fresh cilantro
  • ¼ teaspoon salt
  • teaspoon black pepper

Homemade Jamaican Jerk Seasoning (makes about ½ cup)

  • 2 tablespoons sugar
  • teaspoons onion powder
  • teaspoons dried thyme, crushed
  • 1 tablespoon ground allspice
  • 1 tablespoon black pepper
  • teaspoons cayenne pepper, or paprika
  • teaspoons salt
  • ¾ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

Instructions

  • Cut four bamboo skewers to fit your air fryer basket. Soak in water for at least 30 minutes.
  • Preheat the air fryer to 350°F. In a small bowl, combine the coconut and jerk seasoning. Thread the pork chunks onto the skewers, brush with oil, and sprinkle all sides with the seasoning mixture.
  • Place the skewers in the air fryer basket and cook 5 to 7 minutes, until an instant-read thermometer inserted into the thickest piece reads 145°F.
  • Meanwhile, in a medium bowl, mash one-third of the chopped mango. Stir in the remaining mango, black beans, red onion, lime juice, honey, cilantro, salt, and pepper.
  • Serve the skewers with the salsa alongside.

Notes

For the jerk seasoning: Stir together the sugar, onion powder, thyme, allspice, black pepper, cayenne, salt, nutmeg, and cloves. Store in a small airtight container at room temperature for up to 6 months.
