Description

Easy air fryer Irish soda bread with golden raisins and caraway. No yeast and no rising: mix it in 15 minutes and air fry until golden with a soft, tender center.

Ingredients

  • 1 cup 150 g golden raisins
  • 2 cups 480 ml buttermilk
  • 1 teaspoon pure vanilla extract
  • 4 cups 500 g all-purpose flour, spooned and leveled
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 cup 100 g packed brown sugar
  • 1 teaspoon salt
  • 1 teaspoon caraway seeds
  • 1 teaspoon ground cinnamon

Instructions

  • Combine the raisins, buttermilk and vanilla in a bowl. Let them soak while you prepare the dry ingredients.
  • Preheat the air fryer to 325°F (163°C) for 3–5 minutes.
  • Whisk the flour, baking soda, baking powder, brown sugar, salt, caraway seeds and cinnamon in a large bowl.
  • Pour in the buttermilk mixture. Stir with a fork just until a shaggy, sticky dough forms.
  • Turn the dough onto a floured surface. Fold it over 4–5 times and pat it into a round about 2 inches tall.
  • Cut a deep cross, about 1/2 inch deep, across the top.
  • Place the loaf on trimmed parchment in the air fryer basket. Air fry for 20 minutes.
  • If the top is browning quickly, cover it loosely with foil. Air fry 15–20 minutes more, until the center reads 195–200°F (90–93°C) and the bottom sounds hollow.
  • Cool on a wire rack for at least 20 minutes before slicing.

Equipment

  • Air fryer, 5.8 quarts or larger (basket style or air fryer oven)
  • Large Mixing Bowl
  • Small bowl, for soaking the raisins
  • Whisk
  • Fork or rubber spatula
  • Measuring cups and spoons, or a kitchen scale
  • Sharp knife, for scoring
  • Parchment paper, trimmed to fit the basket
  • Instant-read thermometer
  • Aluminum foil, for tenting
  • Wire cooling rack
  • Optional: 6- or 7-inch round cake pan, for small air fryers

Notes

  • Buttermilk substitute: Mix 2 cups milk with 2 tablespoons lemon juice or white vinegar. Rest 5 minutes.
  • Small air fryer: Halve the recipe and bake in a 6- or 7-inch pan. Start checking at 25 minutes.
  • Self-rising flour: Use 4 cups, omit the baking powder and salt, and use 1/2 teaspoon baking soda.
  • Air fryers vary. If the crust darkens before the center is done, lower the heat to 310°F and add time.
  • Storage: Keep wrapped at room temperature for 2 days, or freeze the baked loaf for up to 3 months.
