Description

A gluten-free quiche with a press-in almond flour crust that crisps up in the air fryer. Spinach, feta, and cherry tomatoes in a creamy custard — no rolling pin, no soggy bottom.

Ingredients 

Crust

  • 2 cups blanched almond flour
  • 3 tablespoons butter, melted
  • 1 large egg
  • ½ teaspoon salt

Filling

  • 4 large eggs
  • ½ cup heavy cream
  • 2 tablespoons olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, packed
  • ¾ cup cherry tomatoes, halved
  • 4 ounces feta cheese, crumbled
  • cup sharp cheddar cheese, shredded
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  • Grease a 7-inch loose-bottom tart pan. Stir the melted butter, egg, almond flour, and salt together until a soft dough forms.
  • Press the dough evenly into the base and up the sides of the pan, about ¼ inch thick. Prick the base with a fork.
  • Air fry at 320°F (160°C) for 6 minutes, until dry and just golden at the rim. Set aside.
  • Heat the olive oil in a skillet over medium. Cook the onion 5 minutes until translucent, add the garlic for 30 seconds, then the spinach until wilted and the pan is dry. Drain any liquid and let cool.
  • Whisk the eggs and cream until uniform. Stir in the salt, pepper, feta, tomatoes, and the cooled vegetables.
  • Pour into the par-baked crust and top with cheddar.
  • Air fry at 320°F (160°C) for 20–25 minutes, shielding the crust rim with foil once it's golden. Done when the center is just set and reads 165°F (74°C).
  • Rest 10 minutes before slicing. Serve warm with a green salad.

Notes

  • Blanched almond flour, not almond meal — the skins make the crust crumbly.
  • Almond flour browns fast. If your air fryer runs hot, drop to 310°F and add 5 minutes.
  • Drain the vegetables thoroughly. Excess moisture is the main reason quiche fails to set.
  • Measure your basket before buying a pan. 6-quart baskets fit a 7-inch pan; some 5.8-quart models only fit 6-inch.
