Air Fryer Gluten-Free Banana Bread

Description

This air fryer gluten-free banana bread is moist, tender, and full of real banana flavor — and it's vegan, egg-free, and dairy-free too. It bakes at 320°F in about 20 minutes, no oven required.

Ingredients 

  • 3 ripe bananas
  • cups all-purpose gluten-free flour, 1:1 blend with xanthan gum
  • 1 cup granulated sugar
  • 1 cup unsweetened applesauce
  • 1 stick vegan butter, ½ cup, room temperature
  • ½ tablespoon ground cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Instructions

  • Grease a mini loaf pan (or one standard loaf pan) with cooking spray. Preheat the air fryer to 320°F for 3 minutes.
  • In a large bowl, cream the vegan butter and sugar until light and fluffy.
  • Add the bananas, applesauce, and cinnamon. Mash and mix thoroughly — the mixture will look curdled, which is normal.
  • In a separate bowl, whisk the gluten-free flour, salt, and baking soda together.
  • Add the dry ingredients to the wet and mix just until combined. Let the batter rest 10 minutes so the flour hydrates.
  • Pour into the prepared pan, filling no more than two-thirds full. Place in the air fryer basket.
  • Air fry at 320°F on the air fryer setting for 15–20 minutes, until a knife inserted in the center comes out clean. Begin checking at 15 minutes.
  • Cool in the pan 10 minutes, turn out onto a wire rack, and cool at least 20 minutes more before slicing.

Notes

  • Makes 1 regular loaf or 3 mini loaves. Mini loaves cook far more evenly in an air fryer.
  • For a full-size loaf: 310°F, add 8–12 minutes, tent with foil once golden.
  • If your gluten-free blend doesn't contain xanthan gum, add ¼ teaspoon.
  • Optional: ⅓ cup chopped walnuts or pecans, or ½ cup dairy-free chocolate chips.
  • Store wrapped at room temperature 2–3 days, refrigerated up to a week, or frozen 1–2 months.
