Preheat the air fryer to 400°F (200°C) for 3 to 5 minutes.
In a shallow dish, combine the grated parmesan, panko, garlic powder, Italian seasoning, salt, and pepper.
Beat the egg in a second shallow dish. Pat the chicken pieces dry, then dip each in the egg, letting the excess drip off.
Press each piece firmly into the parmesan panko mixture until fully coated.
Spray the air fryer basket with olive oil. Arrange the chicken in a single layer with space between pieces. Spray the tops generously.
Air fry at 400°F for 8 to 10 minutes, flipping and re-spraying at the halfway point, until golden brown and the internal temperature reaches 165°F (74°C).
Rest 1 minute and serve hot with your favorite dipping sauce.
