Juicy air fryer chicken breasts topped with sweet roasted onions and melty Fontina cheese — all the flavor of French onion soup in a fast, gluten-free, low-carb dinner.
Ingredients
For the Onions
1largeonion, thinly sliced
2tablespoonsolive oil
1teaspoongranulated sugar
1/2teaspoonkosher salt
1/4teaspoonblack pepper
For the Chicken
2boneless, skinless chicken breasts,
2teaspoonsolive oil
1/2teaspoonkosher salt
1/4teaspoonblack pepper
2ounces Fontina cheese, sliced
Instructions
Slice the onion into thin slices.
Toss the onions with olive oil, sugar, salt, and pepper. Spread them in a single layer in the air fryer basket or on the tray. Air fry at 350°F for 5–7 minutes, until soft and golden. (For deeper, jammy onions, roast in 5-minute rounds for 15–20 minutes total, tossing between each.)
Rub the chicken breasts with olive oil and season with salt and pepper. Air fry at 350°F for 7–9 minutes, flipping halfway, until cooked through to an internal temperature of 165°F.
Top each chicken breast with the roasted onions.
Lay the sliced Fontina over the onions and return to the air fryer at 350°F for 1–2 minutes, just until the cheese is melted.
