Description

Air fryer enchiladas with seasoned ground beef, black beans, and plenty of red sauce and cheddar. Crisp edges, tender centers, on the table in about 25 minutes.

Ingredients 

  • 1 pound lean ground beef
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 10 corn tortillas
  • 15 ounce red enchilada sauce, about 2 cups, divided
  • 2 cups shredded cheddar cheese, divided
  • 1 cup black beans, drained and rinsed
  • ¾ cup Rotel diced tomatoes with green chiles, drained
  • ½ cup white onion, chopped and divided
  • 1 jalapeño, sliced, for serving

Instructions

  • Heat a skillet over medium heat. Add the ground beef with the garlic powder, salt, and pepper, and cook until browned, about 7 minutes, breaking it apart as it cooks. Drain the grease well.
  • Stack the corn tortillas, wrap in a damp paper towel, and microwave 30 seconds. Keep covered until ready to use.
  • In a large bowl, combine the cooked beef, black beans, drained Rotel, ¼ cup of the chopped onion, ¾ cup of the cheese, and ¼ cup of the enchilada sauce. Reserve a spoonful each of Rotel and onion for topping.
  • Line the air fryer basket with foil, folding the edges up to contain the sauce. Spread ⅓ cup of enchilada sauce across the bottom.
  • Fill each tortilla with about ⅓ cup of filling, roll tightly, and arrange seam-side down in a single layer. Do not stack. Work in batches if needed.
  • Pour the remaining enchilada sauce evenly over the top and cover with the remaining cheese.
  • Lay a loose sheet of foil over the top. Cook at 350°F for 8 minutes.
  • Remove the foil and cook 4 to 5 minutes more, until the cheese is melted and the edges are golden.
  • Transfer to a serving dish. Top with the reserved Rotel and onion, sliced jalapeño, and any toppings you like.

Notes

  • Batch cooking: Most 5- to 6-quart baskets fit 5 to 6 enchiladas. Crowding produces soft, pale tortillas.
  • All air fryer: Cook the raw beef at 380°F for 4 minutes, stir, then 3 minutes more. Drain and season.
  • Make ahead: Assemble up to 24 hours in advance and add 2 to 3 minutes to the covered cook time.
  • Reheating: 350°F for 3 to 5 minutes.
