Description

A high-protein air fryer egg white quiche with a genuinely crisp pastry base — not a crustless workaround. Par-baking the empty shell for five minutes is what keeps the bottom from going soggy under the egg filling.

Ingredients 

  • 6 inch round of pie crust dough, about ⅓ of a refrigerated rolled crust
  • 2 tablespoons cooked vegetables, well drained
  • cup cheddar cheese, grated
  • 2 large egg whites, or ¼ cup carton egg whites
  • 1 tablespoon heavy cream
  • teaspoon salt
  • teaspoon black pepper

Instructions

  • Remove the refrigerated pie crust from the fridge 15 minutes before starting.
  • Unroll the crust, set the tart pan on top, and cut a circle about 1 inch wider than the pan.
  • Press the crust into the tart pan, tucking down the sides. Trim so the crust is level with the top edge.
  • Place the tart pan in the air fryer basket and cook at 300°F for 5 minutes to par-bake the crust.
  • Sprinkle the grated cheese over the base of the par-baked crust, then add the cooked vegetables.
  • Whisk the egg whites and heavy cream together until smooth and slightly frothy.
  • Pour the egg mixture over the filling, stopping level with the top edge of the crust. Do not overfill. Season with salt and pepper.
  • Return to the air fryer basket and cook at 300°F for 8 to 10 minutes, until the center is set and no longer wobbles.
  • Rest 1 to 2 minutes, then push the removable bottom up to release the quiche. Slide a spatula underneath to lift it off the base plate.

Notes

  • The 5-minute par-bake is not optional if you want a crisp bottom crust.
  • Vegetables must be cooked and drained first, or the custard will be watery.
  • Two quiches usually fit at once in a basket air fryer with no change to cook time.
  • Oven-style air fryers may need 1 to 2 extra minutes.
  • Reheat at 300°F for 3 to 4 minutes.
  • Store refrigerated up to 3 days or frozen up to 2 months.
