Description

This easy Air Fryer Crumb Cake has a moist sour cream cake base topped with a thick, buttery cinnamon streusel. Made in a 7-inch pan in about 45 minutes — no oven required, and perfect for breakfast, brunch, or dessert.

Ingredients 

Cake:

  • 1 1/4 cups all-purpose flour, spooned and leveled
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 large egg, room temperature
  • 1/2 cup sour cream
  • 1 teaspoon pure vanilla extract

Crumb Topping:

  • 8 tablespoons 1 stick unsalted butter, room temperature
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon ground cinnamon

Instructions

  • Make the batter: In a large bowl, cream the butter and granulated sugar until light and fluffy, about 2 minutes. Beat in the egg, sour cream, and vanilla extract until smooth.
  • Add the flour, baking powder, baking soda, and salt. Mix just until combined — do not overmix.
  • Fill the pan: Grease a 7-inch round cake pan and spread the batter in an even layer.
  • Make the topping: In a second bowl, cream the butter with the brown sugar and granulated sugar. Mix in the flour and cinnamon until pea-sized crumbs form.
  • Spoon the crumb topping evenly over the batter without pressing it down.
  • Air fry: Place the pan in the air fryer basket and cook at 320°F (160°C) for 20–25 minutes, checking at 15 minutes. Tent with foil if the topping browns too quickly. The cake is done when a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10–15 minutes before slicing. Serve and enjoy!
