Description

Tender air fryer quick bread with tart cranberries, fresh orange zest and toasted walnuts, baked in 3 mini loaf pans at 320°F.

Ingredients

  • 2 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ¾ cup granulated sugar
  • ¼ cup unsalted butter, melted and slightly cooled
  • 1 large egg
  • ¾ cup orange juice
  • 1 tablespoons orange zest, from 1–2 oranges
  • 1 cup fresh or frozen cranberries, coarsely chopped
  • 1 cup walnuts, chopped (toasted, optional)
  • Optional orange glaze: 1 cup powdered sugar + 2–3 tablespoons orange juice or milk.

Instructions

  • Grease 3 mini loaf pans and confirm they fit in your air fryer basket.
  • In a large bowl, whisk the melted butter and sugar. Whisk in the egg, orange juice and orange zest.
  • Add the flour, baking powder, baking soda and salt. Stir just until no dry flour remains.
  • Gently fold in the cranberries and walnuts.
  • Divide the batter among the pans, filling each about two-thirds full.
  • Air fry at 320°F (air fryer setting) for 20 minutes.
  • Test the center of each loaf with a toothpick. If it isn't clean, air fry 3–5 minutes more and test again.
  • Cool in the pans for 10 minutes, then turn out onto a wire rack. Glaze once fully cool, if using.

Equipment

  • Air fryer (basket or oven style)
  • 3 mini loaf pans, about 5.75 × 3 inches (metal or silicone)
  • Cooking spray or softened butter for greasing
  • Large Mixing Bowl
  • Whisk
  • Rubber Spatula
  • Measuring Cups and Spoons
  • Microplane or zester
  • Citrus juicer (optional)
  • Chef's knife and cutting board (for chopping cranberries and walnuts)
  • Toothpick or cake tester
  • Instant-read thermometer (optional)
  • Wire cooling rack

Notes

  • Mini loaf pans bake through evenly; a full-size loaf may stay raw in the center.
  • Frozen cranberries: chop and add while frozen; add 2–3 minutes to the bake time.
  • Dried cranberries: use the same amount; the bread will be sweeter.
  • Toss the cranberries with 1 tablespoon of the measured flour to keep them from sinking.
  • Cook times vary by air fryer model. Start checking at 18 minutes; the center should reach about 200°F.
  • Oven: 350°F for 30–35 minutes (mini loaves) or 55–65 minutes (one 9×5 loaf).
  • Store wrapped at room temperature up to 3 days, refrigerated up to 1 week, or frozen up to 3 months.
