Air Fryer Cranberry Bread with Orange Glaze

Description

Moist, tender air fryer cranberry bread studded with tart berries and finished with a bright orange glaze. This easy quick bread bakes in about half the time of an oven loaf and works with fresh, frozen, or dried cranberries — perfect for holiday breakfasts, gifting, and cozy mornings with coffee.

Ingredients 

Cranberry Bread

  • 2 cups cranberries, fresh or frozen
  • 1 2/3 cups granulated sugar
  • 2/3 cup vegetable oil
  • 1/2 cup milk
  • 1 teaspoon pure vanilla extract
  • 4 large eggs
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

Orange Glaze

  • 1 cup powdered sugar
  • 1/4 teaspoon orange zest
  • 2 tablespoons orange juice

Instructions

  • In a large mixing bowl, whisk together 1 2/3 cups granulated sugar, 2/3 cup vegetable oil, 1/2 cup milk, 1 teaspoon vanilla, and 4 large eggs until smooth.
  • Add 3 cups all-purpose flour, 3 teaspoons baking powder, and 1/2 teaspoon salt. Mix just until combined, scraping down the sides of the bowl. Do not overmix.
  • Gently fold in 2 cups cranberries. If using frozen berries, add them frozen without thawing.
  • Grease your air fryer safe loaf pans and fill each about two-thirds full. Mini loaf pans are strongly recommended over a full-size pan.
  • Set the pan into the air fryer and bake at 320°F on the air fry setting for 20 to 30 minutes. Insert a toothpick into the center — if it comes out with wet batter, add 5 minutes and check again. Most air fryers need 30 to 40 minutes total.
  • Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • In a small bowl, whisk 1 cup powdered sugar with 1/4 teaspoon orange zest and 2 tablespoons orange juice. Add the remaining tablespoon a little at a time until the glaze is pourable but not runny.
  • Drizzle the orange glaze over the cooled loaves. Let it set for a few minutes, then slice and serve.

Notes

  • Mini loaf pans bake far more evenly than a full-size loaf pan in an air fryer. A deep pan will brown on top before the center is cooked.
  • To use dried cranberries, soak them in the 1/2 cup of milk for 20 minutes, then add both to the batter.
  • Toss the cranberries in a tablespoon of the measured flour before folding them in to keep them from sinking.
  • If the top is browning too quickly, tent the pan loosely with foil for the last 10 minutes.
  • Glaze only after the bread is completely cool, or the glaze will melt and soak in.
