Description

These copycat Starbucks vanilla bean scones are buttery and tender with crisp golden edges and a sweet vanilla bean glaze — made fast in the air fryer in under 40 minutes. The perfect bakery-style treat for breakfast or with coffee.

Ingredients 

Scones

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter, cold and diced
  • 1/2 cup heavy whipping cream, cold
  • 2 teaspoons pure vanilla extract

Vanilla Bean Glaze

  • 1 cup powdered sugar
  • 1 vanilla bean, scraped (or 1 tsp vanilla bean paste)
  • 1 1/2 tablespoons milk

Instructions

  • In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold diced butter and cut it in with a pastry cutter or fork until the mixture resembles coarse crumbs.
  • In a small bowl, stir together the cold heavy cream and vanilla extract. Pour into the dry mixture and stir until just combined — do not overmix.
  • Turn the dough out onto a lightly floured surface and pat into a circle about 1/2 inch thick. Cut into 8 equal triangles and place on a lightly greased air fryer tray or basket, leaving space between each.
  • Air fry at 330°F (165°C) for 10–12 minutes, until the scones are golden brown. (Optional: brush the tops with a little heavy cream before air frying for extra color.)
  • While the scones cool slightly, whisk together the powdered sugar, scraped vanilla bean seeds, and milk until smooth. Drizzle over the warm scones and let the glaze set before serving.

  • Don't overmix — overworked dough makes tough scones.
  • No vanilla bean? Use 1 tsp vanilla bean paste or extra vanilla extract.
  • Store airtight at room temperature up to 3 days, or freeze up to 3 months.
  • For gluten-free, use a 1:1 gluten-free flour blend.
