Marinate: Cut the chicken into 1-inch pieces. In a large bowl, whisk together the milk, egg, and dill pickle juice. Add the chicken, coat well, and marinate at least 30 minutes (or overnight, refrigerated).
Preheat & mix breading: Preheat the air fryer to 400°F (200°C) for 3–5 minutes. In a shallow dish, stir together the flour, powdered sugar, salt, and pepper.
Coat: Remove the chicken from the marinade, letting excess drip off. Dredge each piece in the flour mixture, pressing gently to coat all sides.
Air fry: Place the chicken in a single layer in the air fryer basket. Cook 8–10 minutes, flipping halfway, until golden and cooked through (165°F internal temperature).
Toast the rolls: Split the slider rolls, brush the cut sides with melted butter, and toast in the air fryer 1–2 minutes until golden.
Assemble: Place a piece of chicken on each roll bottom, drizzle lightly with honey, and add the top.
Serve: Arrange on a platter and serve warm with your favorite dipping sauces.
