Air Fryer Chocolate Raspberry Cupcakes

Description

Moist chocolate cupcakes with a hidden raspberry jam center and easy raspberry frosting, baked in the air fryer in about 12 minutes.

Ingredients 

  • 8 ounces devil's food cake mix, plus ingredients called for on the box
  • cup raspberry jam, divided
  • 1 teaspoon pure vanilla extract
  • 16 ounces white, vanilla frosting
  • 1 cup fresh raspberries, for garnish

Instructions

  • Prepare the devil's food cake mix according to the package instructions for cupcakes.
  • Fill silicone cupcake liners ⅓ full. Add 1 teaspoon of raspberry jam to the center of each, then top with more batter until ⅔ full.
  • Place several cupcakes in the air fryer basket and set it to 320°F on the air fry setting.
  • Bake for 9–12 minutes, until the cupcakes are cooked through. Work in batches until all the batter is used.
  • While the cupcakes bake, stir the remaining raspberry jam and the vanilla extract into the frosting until smooth.
  • Let the cupcakes cool completely before frosting.
  • Spread or pipe the raspberry frosting onto each cupcake and top with one fresh raspberry. Serve and enjoy.
