Ingredients 

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini, excess moisture squeezed out
  • 1/2 cup chocolate chips
  • Chopped nuts, optional

Instructions

  • Grate the 1 cup grated zucchini and use a clean kitchen towel or paper towels to squeeze out excess moisture. Set aside.
  • Preheat your air fryer temperature to 330 degrees F (165°C), for 3-5 minutes.
  • Grease a 7-inch round cake pan or a mini loaf pan with cooking spray.
  • In a mixing bowl, whisk together the1 1/2 cups all-purpose flour 1 teaspoon baking powder, 1/2 teaspoon salt, and 1 teaspoon ground cinnamon.
  • In another bowl, combine the melted 1/2 cup unsalted butter and 3/4 cup granulated sugar Mix until well combined. Add t1 large egg and 1 teaspoon vanilla extract, and whisk until the mixture is smooth.
  • Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
  • Gently fold in the grated zucchini, 1/2 cup chocolate chips, and Chopped nuts(if using) into the batter.
  • Pour the batter into the prepared cake pan, spreading it evenly.
  • Place the pan in the preheated air fryer basket. Air fry at 330°F (165°C) and set cook time for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Once done, remove the pan from the air fryer and let the zucchini bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
