Preheat your air fryer to 380°F (190°C) for 3-5 minutes.
Slice each 2 chicken breasts horizontally to create 4 thinner cutlets.
In a shallow bowl, whisk the 2 large eggs together.
In a second shallow bowl, combine the 1/2 cup panko breadcrumbs, 1 teaspoon salt and 1/2 teaspoon black pepper.
Place 1/4 cup all-purpose flour in a third shallow bowl.
Dredge each chicken piece in flour, dip into the egg mixture, and coat with the panko breadcrumb mixture, pressing gently to stick.
Arrange the breaded chicken cutlets in the air fryer basket, making sure they are not touching.
Lightly spray the breaded chicken cutlets with cooking spray.
Air fry at 380°F (190°C) for 23 minutes, flipping halfway through, until golden brown and cooked through.
Let the cutlets rest for a few minutes before serving.
