Description

Crispy air fryer chicken croquettes made with ground chicken, Parmesan, and simple seasonings. Ready in about 30 minutes, they're an easy high-protein dinner or appetizer the whole family will love.

Ingredients 

  • 1 pound ground chicken
  • 2 large eggs, beaten
  • 2 tablespoons onion, finely diced
  • 2 tablespoons celery, finely diced
  • ½ cup panko breadcrumbs
  • 2 tablespoons Parmesan cheese, grated
  • ½ teaspoon dried parsley
  • ¼ teaspoon garlic, minced
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika

Instructions

  • In a large bowl, combine the ground chicken, panko, Parmesan, parsley, onion, celery, garlic, salt, pepper, and paprika. Add the beaten eggs and mix until just combined.
  • Scoop about 1 tablespoon of the mixture and shape into a small ball or short cylinder. Repeat with the remaining mixture. For best results, chill the shaped croquettes 15–20 minutes.
  • Preheat the air fryer to 375°F (190°C) for 3–4 minutes.
  • Lightly spray or brush the basket with oil. Arrange the croquettes in a single layer with space between each, then spritz the tops with oil.
  • Air fry for 10–12 minutes, flipping halfway, until golden, crispy, and cooked to an internal temperature of 165°F (74°C).
  • Let rest a few minutes and serve hot with your favorite dipping sauce.

Notes

  • Leftover chicken swap: Use 2 cups finely shredded cooked chicken and reduce cook time to 7–9 minutes, just until crisped and heated to 165°F.
  • From frozen: Air fry at 400°F for 8–10 minutes, flipping halfway.
  • Storage: Refrigerate up to 3–4 days; freeze uncooked croquettes up to 3 months. Reheat at 350°F for 5–7 minutes to re-crisp.
  • Chilling before cooking helps the croquettes hold their shape; add a little extra egg or panko if the mixture feels loose.
