Description

Air Fryer Chicken and Broccoli is such an easy and healthy lunch or dinner. And you know what, it is amazing and straightforward. This is one of my favorites if you are looking for a quick and easy Air Fryer Stir Fry.

Ingredients 

Ingredients

  • 1 lb chicken breast, cubed
  • 2 cups broccoli florets

Teriyaki Sauce

  • 1/4 cup soy sauce
  • 2 tablespoon honey , or maple syrup
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon ginger, grated
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sesame oil

Instructions

  • Cube chicken breasts or thighs and chop broccoli florets into bite-sized pieces. Set aside.
  • For the teriyaki sauce, whisk together soy sauce, honey, 1rice vinegar, sesame oil, minced garlic, and grated ginger. Adjust to taste if desired.
  • Place the chicken pieces in a bowl and pour half of the teriyaki sauce over it, reserving the other half for later. Let it marinate for 15–20 minutes.
  • Preheat the air fryer to 380°F (193°C). Spray the basket lightly with cooking spray.
  • Place the marinated chicken pieces and broccoli in the air fryer basket in a single layer for even cooking. If needed, cook in batches.
  • Cook for 10–12 minutes, shaking the basket halfway through to ensure even cooking. If using thicker chicken pieces, you may need an extra minute or two.
  • Once cooked, transfer the chicken and broccoli to a bowl. Pour the reserved teriyaki sauce over the top, tossing to coat.

Notes

Storing Cooked Chicken and Broccoli:
  1. Cooling: Allow the chicken and broccoli to cool to room temperature.
  2. Containers: Transfer to airtight containers to maintain freshness.
  3. Refrigeration: Store in the refrigerator for up to 3-4 days.

Reheating Cooked Chicken and Broccoli:
  1. Air Fryer:
    • Preheat the air fryer to 300°F (150°C).
    • Spread the chicken and broccoli in a single layer in the air fryer basket.
    • Reheat for 4-5 minutes or until warmed through, ensuring it doesn't overcook.
  2. Oven:
    • Preheat the oven to 325°F (165°C).
    • Spread the chicken and broccoli on a baking sheet.
    • Heat for 10-15 minutes or until warmed through.
  3. Microwave:
    • Place the chicken and broccoli in a microwave-safe dish.
    • Cover with a microwave-safe lid or plastic wrap, leaving a small vent for steam.
    • Heat at 50% power in 1-minute intervals, stirring between each interval until warmed through.

Freezing Cooked Chicken and Broccoli:
  1. Cooling: Ensure the chicken and broccoli have cooled to room temperature.
  2. Portioning: Divide into meal-sized portions for easier reheating later.
  3. Wrapping: Use heavy-duty aluminum foil, freezer bags, or airtight freezer-safe containers.
  4. Labeling: Label with the date and contents to track freezer life.
  5. Freezing: Store in the freezer for up to 3 months.

Thawing and Reheating from Frozen:
  1. Thawing: For best results, thaw in the refrigerator overnight.
  2. Reheating: Follow the reheating guidelines above. If reheating directly from frozen, extend the reheating time.

Pro Tip: While you can freeze and reheat this dish, the texture of the broccoli might become softer after freezing. It's best enjoyed fresh, but if freezing is necessary, the flavors will still remain delicious!
