Ingredients
1poundrusset potatoes, diced into 1-inch pieces
1packetdry ranch seasoning mix, about 1 oz
4slicesbacon, diced
1cupshredded sharp cheddar cheese
2teaspoonsolive oil, optional
Fresh parsley or sliced green onions, for serving
Instructions
Wash the potatoes and dry them thoroughly with a kitchen towel or paper towel. Dice into quarters, then cut again into roughly 1-inch pieces.
Add the diced potatoes to the air fryer basket. Spray or brush with olive oil, sprinkle the dry ranch seasoning over the top, and toss to coat evenly.
Scatter the diced bacon over the potatoes.
Set the air fryer to 350°F (175°C) and cook for 15–18 minutes, shaking the basket once at the halfway mark, until the bacon is crisp and the potatoes are fork-tender.
Sprinkle the shredded cheddar over the potatoes and return the basket to the air fryer. Leave the air fryer OFF — the residual heat will melt the cheese in about 2 minutes.
Top with fresh parsley or sliced green onions. Serve hot.
