Ingredients
12egg roll wrappers
12slicespepper jack cheese, or Havarti, Swiss, or cream cheese
12slicesdeli ham, thinly sliced
12largedill pickle spears
Instructions
Blot the pickle spears thoroughly on paper towels, drying all sides. This is the most important step for a crisp wrapper.
Place an egg roll wrapper on a work surface with one corner facing you. Layer a slice of ham, a slice of cheese, and a dried pickle spear across the center.
Fold the bottom corner over the filling, fold in both side corners, and roll tightly. Dampen the final corner with water and press to seal.
Spray the air fryer basket with cooking spray. Arrange the egg rolls seam side down in a single layer, not touching. Spray the tops generously.
Air fry at 360°F for 8 to 10 minutes, flipping and spraying again at the halfway point. They're done when deeply golden and blistered, with cheese bubbling at the ends.
Rest on a wire rack for 2 minutes before serving. Serve hot with your favorite dipping sauce.
