Tender, crispy cauliflower roasted with sweet cherry tomatoes for a quick, healthy, and flavorful side dish. Ideal for weeknight dinners or meal prep.
Ingredients
1mediumhead cauliflower, about 5-6 cups of cauliflower florets
1tablespoonItalian seasoning
1 1/2teaspoonpaprika powder
1/4cupolive oil
1teaspoongarlic powder
1teaspoononion powder
1teaspoonkosher salt
1/2teaspoonblack pepper
1/2cupgrape tomatoes, sliced
Instructions
Preheat the air fryer temperature to 400 degrees F, for 3-5 minutes.
Trim the 1 medium head cauliflower by cutting out the thick stem and removing the outer leaves. Cut into bite-size florets.
In a large bowl combine cauliflower, 1/4 cup olive oil1 tablespoon Italian seasoning, 1 1/2 teaspoon paprika powder, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper (or you can use a Ziplock bag for this). Make sure the cauliflower is coated nicely.
After preheating the air fryer, place the seasoned vegetables in the basket and air fry for 7 minutes, shaking the basket once or twice halfway through for even cooking. The cauliflower should be lightly charred and crisp—air fry 1–2 more minutes if you prefer extra browning.
Transfer the cooked cauliflower to a large bowl, toss with the halved 1/2 cup grape tomatoes, and serve with your favorite dipping sauce.
