Description

Crispy, smoky, sweet Air Fryer Carrot Bacon — the viral vegan bacon made from thinly sliced carrots and a quick maple-soy marinade. Vegan, vegetarian, and ready in under 30 minutes.

Ingredients 

  • 2 medium-large carrots
  • 1 tablespoon maple syrup
  • 2 tablespoons soy sauce, or tamari for gluten-free
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Cooking spray, olive or avocado oil

Instructions

  • In a small bowl, whisk together the maple syrup, soy sauce, smoked paprika, garlic powder, onion powder, and black pepper.
  • Using a vegetable peeler or mandoline, shave the carrots lengthwise into long, thin strips.
  • Place the carrot strips in a shallow container, pour the marinade over them, and let marinate for 15 minutes.
  • Preheat the air fryer to 380°F (193°C) and lightly spray the basket with oil.
  • Arrange the strips in a single layer, without overlapping. Air fry for 3 minutes, flip, then cook 2 more minutes until the edges are crispy. Repeat with remaining strips.
  • Serve immediately for the crispiest texture.

Notes

  • Slice thin and even for the crispiest result — thick strips stay soft.
  • Don't overcrowd the basket; work in batches so air circulates.
  • Best fresh. Store leftovers in the fridge 3–4 days; re-crisp at 350°F with a brush of fresh marinade.
  • Gluten-free: use tamari instead of soy sauce.
  • Cooking times vary by air fryer model — start checking at the 4-minute mark.
