Ingredients
2medium-large carrots
1tablespoonmaple syrup
2tablespoonssoy sauce, or tamari for gluten-free
1/4teaspoonsmoked paprika
1/4teaspoongarlic powder
1/4teaspoononion powder
1/4teaspoonblack pepper
Cooking spray, olive or avocado oil
Instructions
In a small bowl, whisk together the maple syrup, soy sauce, smoked paprika, garlic powder, onion powder, and black pepper.
Using a vegetable peeler or mandoline, shave the carrots lengthwise into long, thin strips.
Place the carrot strips in a shallow container, pour the marinade over them, and let marinate for 15 minutes.
Preheat the air fryer to 380°F (193°C) and lightly spray the basket with oil.
Arrange the strips in a single layer, without overlapping. Air fry for 3 minutes, flip, then cook 2 more minutes until the edges are crispy. Repeat with remaining strips.
