Description

Crisp, glossy walnuts in a coffee-caramel shell — made in the air fryer in 11 minutes flat, with no candy thermometer required.

Ingredients

  • 2 cups raw walnut halves and pieces, 8 oz
  • 1/4 cup granulated sugar
  • 2 Tablespoons water
  • 2 teaspoons instant coffee
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon kosher salt

Instructions

  • Preheat the air fryer to 350°F. Line the tray with foil to prevent the syrup from dripping and burning on the bottom.
  • In a medium bowl, mix together all of the ingredients until well combined. Make sure the sugar has started to melt and the coffee crystals have dissolved.
  • Pour the nut mixture into the preheated air fryer basket and cook for 3 minutes.
  • Gently stir the nuts with a spatula and cook for 2–3 minutes longer, or until the nuts are shiny and the syrup has thickened.
  • Pour out onto a parchment-lined tray and let cool for at least 15 minutes. The walnuts will harden as they cool.
  • Serve as a snack with dried fruit, or on top of yogurt or ice cream.

Notes

Use raw walnuts, not pre-roasted. Instant coffee or espresso powder only — ground coffee will not dissolve. The nuts will feel soft coming out of the basket and harden as they cool. Store airtight at room temperature for up to 1 week.
