Air Fryer Canadian Bacon Egg Cups

Description

Canadian bacon holds its shape where regular bacon slumps, which makes it the better base for an egg cup. These are keto, about 1 carb each, and ready in20 minutes in the air fryer.

Ingredients 

  • 4 slices Canadian bacon
  • 4 large eggs
  • ¼ teaspoon salt
  • teaspoon black pepper

Instructions

  • Preheat the air fryer to 300°F. Spray the muffin tin wells with cooking spray, including the sides.
  • Press a slice of Canadian bacon into each well so it lines the bottom and comes up the sides. If a slice tears, overlap a second piece over the gap.
  • Crack one egg into each lined cup. Go slowly to keep the yolk intact.
  • Season each egg with salt and pepper.
  • Air fry at 300°F for 12–14 minutes, until the whites are opaque and set to the center. Start checking at 10 minutes — air fryers vary more than ovens.
  • Rest 2–3 minutes before lifting them out. Run a knife around the edge if they stick.

Notes

Yolk doneness: pull at 10–11 minutes for runny, 14 minutes for firm.
Storage: refrigerate up to 4 days in an airtight container. Reheat at 300°F
for 2–3 minutes — the microwave works but turns the whites rubbery.
Freezing: freeze in a single layer, then bag. Up to 2 months. Reheat from
frozen for 5–6 minutes.
Regular bacon: par-cook it first or the cup collapses as the fat renders.
