Description

Golden, caramelized air fryer butternut squash seasoned with dried sage and thyme — ready in 25 minutes. The sage cuts through the squash's natural sweetness; the thyme adds a bright, floral lift. Perfect fall side dish for Thanksgiving or any weeknight dinner. Naturally vegan and gluten-free.

Ingredients 

  • 1 medium butternut squash, ~2–2.5 lbs, peeled, seeded, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • ½ tsp garlic powder
  • ½ tsp fine sea salt
  • 4 tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp fresh sage
  • ½ tsp Parmesan, or maple syrup to garnish

Instructions

  • Preheat air fryer to 400°F for 3–5 minutes.
  • Season — toss cubed squash with oil, sage, thyme, garlic powder, salt, and pepper in a large bowl.
  • Single layer — spread in basket, do not crowd. Cook in batches if needed.
  • Air fry 15–18 min at 400°F — shake basket every 5–6 minutes until edges are golden and caramelized and a fork pierces the center easily.
  • Taste, adjust salt, garnish and serve immediately.

Seasoning variations
Maple Sage (sweet): Replace thyme with maple syrup + cinnamon + nutmeg. Keep sage. Add maple after first 10 min.
Parmesan Herb: Base recipe + 3 tbsp grated Parmesan in last 3 min. Crisps into a golden crust.
Spicy Smoked: Add ½ tsp smoked paprika + ¼ tsp cayenne. Double sage, skip thyme.
Brown Butter Finish: Pour browned butter over finished squash. The restaurant move — takes 4 extra minutes.
