4slicesbacon, cooked and crumbled
1/2cupcheddar cheese, shredded
1/2cupvegetables, optional, diced onions, or bell pepper
Instructions
Slice the tops off the bell peppers and remove the seeds and membranes to create hollow "cups" for the filling.
In a bowl, whisk together eggs, salt, pepper, and any seasonings you prefer.
Stir in diced veggies, cheese, or cooked meats like bacon or sausage into the egg mixture.
Pour the egg mixture into each pepper, filling them about ¾ of the way to allow for expansion during cooking.
Place the stuffed peppers in the air fryer basket and cook at 360°F (180°C) for 10-15 minutes, or until the eggs are set and the peppers are tender.
Remove from the air fryer, allow them to cool slightly, and serve hot with your favorite toppings, such as fresh herbs or salsa!
