Ingredients 

  • 2 large bell peppers
  • 4 large eggs
  • 1 teaspoon Kosher salt
  • 1/2 black pepper
  • 1 teaspoon seasoning, optional
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup vegetables, optional, diced onions, or bell pepper

Instructions

  • Slice the tops off the bell peppers and remove the seeds and membranes to create hollow "cups" for the filling.
  • In a bowl, whisk together eggs, salt, pepper, and any seasonings you prefer.
  • Stir in diced veggies, cheese, or cooked meats like bacon or sausage into the egg mixture.
  • Pour the egg mixture into each pepper, filling them about ¾ of the way to allow for expansion during cooking.
  • Place the stuffed peppers in the air fryer basket and cook at 360°F (180°C) for 10-15 minutes, or until the eggs are set and the peppers are tender.
  • Remove from the air fryer, allow them to cool slightly, and serve hot with your favorite toppings, such as fresh herbs or salsa!
