In a large mixing bowl, combine the 1 1/2 cups Fiber One Cereal and 1 cup buttermilk. Let sit for about 20 minutes to soften.
In another bowl, whisk together the 1/3 cup unsweetened applesauce, 1 large egg, and 1 teaspoon pure vanilla extract until smooth.
In a separate bowl, combine 2/3 cup brown sugar, 1 cup all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, and 1 teaspoon salt. Stir until evenly mixed.
Gently fold the soaked cereal, wet mixture, and dry ingredients together until just combined. Avoid overmixing.
Spray your muffin tins with non-stick cooking spray or line with silicone/paper liners.
Pour the batter evenly into the muffin cavities, filling about 2/3 full.
Place the muffin tin in the air fryer basket. Set temperature to 320°F (160°C) and cook for 12–15 minutes.
Insert a toothpick into the center of a muffin. If it comes out clean, muffins are ready; if not, air fry for another 1–2 minutes.
