Description

Air Fryer Blueberry Pancake Muffins—fluffy, golden, and loaded with fresh blueberries. Quick and easy breakfast or brunch treat everyone will love.

Ingredients 

  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup granulated sugar
  • 1 cup buttermilk
  • 2 tablespoons butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 cup blueberries, fresh

Serve with: Powdered sugar or maple syrup

Instructions

  • Mix the 1 cup all-purpose flour,1/4 cup granulated sugar 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon saltin a large bowl. Mix well..
  • Mix in the 1 cup buttermilk, melted 2 tablespoons butter and 1 teaspoon pure vanilla extract..
  • Fold in the 1 cup blueberries mixing well.
  • Spray your muffin tins with cooking spray. Fill the tins about 2/3 the way full, and set them into the air fryer, set air fryer temperature to 320 degrees F, and set cook time for 6-9 minutes.
