Description

Air Fryer Blueberry Muffin For One – a quick, single-serving muffin packed with juicy blueberries. Soft, fluffy, and ready in minutes for breakfast, brunch, or a snack.

Ingredients 

  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted
  • 3 tablespoons sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 4 tablespoons milk, or cream
  • 1/2 cup blueberries, fresh

Instructions

  • In a small mixing bowl, mix the 1/2 cup all-purpose flour, 1/2 teaspoon baking powder, and 1/2 teaspoon salt.
  • Mix in the melted 2 tablespoons butter, 3 tablespoons sugar, 1 large egg yolk, 1 teaspoon vanilla extract, and 4 tablespoons milk.
  • Mix well.
  • Fold in the 1/2 cup blueberries.
  • Either spray a muffin tin (see I recommend one above or line the muffin tin with cupcake liners)
  • Pour your batter into the muffin/cupcake holder/ramekin
  • Set in the air fryer cook time for 5-7 minutes at air fryer temperature of 330 degrees F (air fryer setting)
  • Check to make sure the muffin is fully cooked before you remove it; depending on the air fryer you own, you may need an additional minute or two.
