Air Fryer Blueberry Empanadas with Goat Cheese

Description

Flaky pie crust folded around fresh blueberries and creamy goat cheese, air fried until golden. These sweet empanadas take under 30 minutes and freeze beautifully for later.

Ingredients 

  • 1 package refrigerated pie dough, 2 crusts
  • 2 cups fresh blueberries
  • 1/2 cup crumbled goat cheese
  • 1 tablespoon granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 large egg, beaten
  • 1/4 cup turbinado sugar

Instructions

  • In a small bowl, gently stir together the blueberries, granulated sugar, flour, and crumbled goat cheese. Leave the goat cheese in visible crumbles.
  • Unroll the pie dough onto a lightly floured surface. Cut out circles with a 3-inch biscuit cutter, re-rolling the scraps once to reach 12 rounds.
  • Spoon about 1 tablespoon of filling onto one half of each round, leaving a 1/2-inch border clear.
  • Dampen the border with water, fold the dough over into a half-moon, and press the edges together. Crimp the seam with the tines of a fork.
  • Cut two small vents in the top of each empanada.
  • Brush the tops with beaten egg and sprinkle with turbinado sugar.
  • Preheat the air fryer to 350°F.
  • Place the empanadas in a single layer in a greased basket or on perforated parchment, leaving space between each. Air fry for 9 to 11 minutes, until deep golden and puffed. Work in batches.
  • Rest 5 minutes before serving. The filling is very hot.

Notes

  • Chill before frying. Fifteen minutes in the freezer once assembled makes a real difference in leaking.
  • Frozen blueberries: use from frozen and increase the flour to 2 tablespoons.
  • From frozen: air fry raw frozen empanadas at 350°F for 13 to 15 minutes. Do not thaw.
  • Oven method: 400°F for 18 to 22 minutes on a parchment-lined sheet.
  • Storage: airtight in the refrigerator up to 4 days. Reheat at 350°F for 3 to 4 minutes.
