Ingredients
1cupsall-purpose flour
1cupgranulated sugar
1teaspoonbaking powder
1/2teaspoonbaking soda
1/2teaspoonsalt
1 1/2cupberries, 1 1/2 cups fresh blueberries, raspberries, or strawberries (or a combination of the three, adding up to 1 1/2 cups)
2largeeggs
1cupsour cream
1/2cupcanola oil
1/2teaspoonpure vanilla extract
Instructions
In a large bowl, whisk together the 1 cups all-purpose flour1 cup granulated sugar1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt until fully combined.
Add the 2 large eggs1 cup sour cream, 1/2 cup canola oil, and 1/2 teaspoon pure vanilla extract to the bowl. Gently mix until the batter is just combined.
Carefully fold in the 1 1/2 cup berries being careful not to crush them.
Lightly spray muffin tins or silicone liners with cooking spray. Fill each cavity about 2/3 full with batter.
Place the pan or silicone liners into the air fryer basket. Set air fryer temperature to 320 degrees F and set cook time for 10-12 minutes, or until a toothpick inserted in the center comes out clean.
