Description

Air Fryer Berry Cream Muffins – soft, fluffy muffins loaded with juicy berries and creamy richness. Quick and easy, perfect for breakfast, brunch, or a sweet snack.

Ingredients 

  • 1 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cup berries, 1 1/2 cups fresh blueberries, raspberries, or strawberries (or a combination of the three, adding up to 1 1/2 cups)
  • 2 large eggs
  • 1 cup sour cream
  • 1/2 cup canola oil
  • 1/2 teaspoon pure vanilla extract

Instructions

  • In a large bowl, whisk together the 1 cups all-purpose flour 1 cup granulated sugar 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt until fully combined.
  • Add the 2 large eggs 1 cup sour cream, 1/2 cup canola oil, and 1/2 teaspoon pure vanilla extract to the bowl. Gently mix until the batter is just combined.
  • Carefully fold in the 1 1/2 cup berries being careful not to crush them.
  • Lightly spray muffin tins or silicone liners with cooking spray. Fill each cavity about 2/3 full with batter.
  • Place the pan or silicone liners into the air fryer basket. Set air fryer temperature to 320 degrees F and set cook time for 10-12 minutes, or until a toothpick inserted in the center comes out clean.
