Description

Make crispy, golden Air Fryer Beef Chimichangas at home! A healthier twist on a Mexican classic, filled with seasoned beef and melty cheese.

Ingredients 

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning, or homemade 2 1/2 teaspoons
  • 1 cup shredded cheese, cheddar, Mexican blend, or your choice
  • 4 flour tortillas
  • Optional toppings: sour cream, salsa, guacamole,

Instructions

  • In a pan over medium heat, cook the ground beef until browned. Drain any excess fat. Add the chopped onion, minced garlic, and taco seasoning. Stir to combine, and cook for a few more minutes until the onion softens. Remove from heat.
  • Lay a tortilla flat and spoon a generous amount of the beef mixture in the center. Sprinkle with shredded cheese. Fold the sides of the tortilla inward, then roll it up tightly, securing the filling inside.
  • Lightly spray or brush the chimichangas with olive oil to help them crisp up.
  • Preheat the air fryer to 375°F (190°C). Place the chimichangas seam-side down in the air fryer basket. Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  • Once cooked, remove the chimichangas and let them cool for a minute before serving. Enjoy with your favorite toppings such as sour cream, salsa, or guacamole.
