Description

Air fryer avocado eggs are a quick, low-carb breakfast. An egg is baked into a halved avocado at 400°F until the white is set and the yolk is cooked to your liking.

Ingredients 

  • 1 large avocado, ripe but firm avocado
  • 2 large eggs
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste
  • 2 tablespoons shredded cheddar cheese, optional
  • Chopped chives or cilantro, for garnish

Instructions

  • Preheat the air fryer to 400°F for 3 minutes.
  • Cut the avocado in half lengthwise and remove the pit. Scoop out about 1 tablespoon of avocado from each half to widen the well. Set the scooped avocado aside.
  • Set each half on a small ramekin, or trim a thin slice from the bottom so it sits flat.
  • Crack each egg into a small bowl, then gently pour it into an avocado half. Spoon off any excess white.
  • Season with salt and pepper and sprinkle with cheese, if using.
  • Place in the air fryer basket and cook at 400°F for 6–7 minutes for a runny yolk, 8–9 minutes for jammy, or 10–12 minutes for fully set. Start checking at 5 minutes.
  • Top with the reserved avocado and fresh herbs. Serve immediately.

Equipment

  • 2 small ramekins (optional, for stability)
  • Parchment paper (optional)

Notes

If the whites are setting on top before the center, reduce the temperature to 370°F and add 2 minutes. Nutrition information should be recalculated in the recipe plugin after updating the salt and cheese amounts.
