Air fryer avocado eggs are a quick, low-carb breakfast. An egg is baked into a halved avocado at 400°F until the white is set and the yolk is cooked to your liking.
Ingredients
1largeavocado, ripe but firm avocado
2largeeggs
1/4teaspoonsalt, or to taste
1/8teaspoonblack pepper, or to taste
2tablespoonsshredded cheddar cheese, optional
Chopped chives or cilantro, for garnish
Instructions
Preheat the air fryer to 400°F for 3 minutes.
Cut the avocado in half lengthwise and remove the pit. Scoop out about 1 tablespoon of avocado from each half to widen the well. Set the scooped avocado aside.
Set each half on a small ramekin, or trim a thin slice from the bottom so it sits flat.
Crack each egg into a small bowl, then gently pour it into an avocado half. Spoon off any excess white.
Season with salt and pepper and sprinkle with cheese, if using.
Place in the air fryer basket and cook at 400°F for 6–7 minutes for a runny yolk, 8–9 minutes for jammy, or 10–12 minutes for fully set. Start checking at 5 minutes.
Top with the reserved avocado and fresh herbs. Serve immediately.
