Air Fryer Asparagus, Spinach, and Cheese Frittata – Healthy, quick breakfast or brunch with fresh vegetables and melted cheese.

1/3cupmilk
1/2teaspoonsalt
1/2teaspoonblack pepper
2tablespoonsolive oil
1/2cuponion, diced
1cupasparagus, diced
2cupsbaby spinach
1/2cupwhite cheddar cheese, shredded and divided
5ouncesfeta cheese, crumbled
Instructions
Use a whisk to beat 8 large eggs with 1/3 cup milk, 1/2 teaspoon salt, and 1/2 teaspoon black pepper in a large bowl.
Heat 2 tablespoons olive oil in a 10-inch ovenproof skillet on medium. (Cast iron skillets work great) Add 1/2 cup onion and 1 cup asparagus to the pan and sauté until soft, approx. 7 minutes.
Stir in 2 cups baby spinach and sauté until wilted, approx. 2 minutes.
Spread the cooked vegetables evenly in a skillet and pour the egg mixture over them. Stir in ¼ cup of shredded cheddar cheese. Crumble 5 ounces feta cheese on top. Cook without stirring until eggs are just beginning to set around the edges, approx. 2 to 3 minutes.
Place the skillet in the air fryer and air fry the frittata until almost set in center, set cook time for 7-10 minutes, at air fryer temperature of 350 degrees F. cheese.
Remove the skillet from the air fryer and top with the remaining ¼ cup shredded cheddar
Oven Method: Preheat the oven to 375°F (190°C). Cook the vegetables in an ovenproof skillet for 7 minutes, then pour in the egg mixture. Bake for 12–15 minutes or until the eggs are fully set.
Stovetop Method: Use a nonstick skillet over medium-low heat. Cover the skillet with a lid and cook slowly, stirring occasionally, until the eggs are set and slightly golden on the bottom.
Broiler Finish: After cooking the frittata on the stovetop or air fryer, place it under a preheated broiler for 1–2 minutes to brown the top and melt the cheese.
