Ingredients 

  • 4 pork chops
  • 1/2 cup apricot preserves
  • 1/2 cup sweet and sour sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon olive oil
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper

Instructions

  • In a large mixing bowl, add the apricot preserves, sweet and sour sauce, rice vinegar, olive oil, Kosher salt, and black pepper.
  • Place the pork chops into the marinade, cover and refrigerate. Let the pork chops marinate for at least 30 minutes to allow the flavors to meld.
  • Preheat the air fryer to 375 degrees F (190°C) for 3-5 minutes. Remove the pork chops from the marinade and shake off any excess. Place them in the air fryer basket in a single layer, ensuring they are not overcrowded.
  • Set cook time for 12-15 minutes, flipping halfway through, until they are golden brown and cooked through. The internal temperature should reach 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
  • Once cooked, let the pork chops rest for a few minutes before serving.

Notes

To make the apricot sauce, simply add the olive oil and garlic to a small frying pan, heat up the garlic for about a minute, then add the soy sauce, minced garlic, salt, water, and apricot jam, continuing simmering, until it comes to a boil.
