In a small bowl, combine the diced apple pie filling, granulated sugar, and ground cinnamon. Stir well.
Lay a wonton wrapper flat on a clean surface. Add about 1 tablespoon of the apple filling to the center.
Dip a finger in water (or the excess filling liquid) and brush around all four edges of the wrapper.
Fold the wonton into a triangle, bringing one corner to the opposite corner. Press the edges firmly to seal — use a fork for extra security.
Repeat with the remaining wrappers and filling.
Lightly spray the air fryer basket with olive oil. Arrange the wontons in a single layer with space between each one.
Spray the tops of the wontons lightly with olive oil and sprinkle with sparkling sugar if using.
Air fry at 320°F (160°C) for 5–6 minutes, until golden brown and crispy.
Let cool for 1–2 minutes, then serve warm with caramel sauce, powdered sugar, or ice cream.
