Description

This easy 4 ingredient potato soup is creamy, comforting, and made right on the stovetop with just russet potatoes, milk, garlic salt, and green onions. It's naturally gluten-free, needs no cream or flour, and comes together in about 45 minutes.

Ingredients 

  • 2 lbs russet potatoes, about 4 medium, peeled and cut into 1-inch pieces
  • 2 cups whole milk
  • 1/2 tsp garlic salt, to taste
  • 4 green onions, thinly sliced, divided

Instructions

  • Add the potatoes to a large pot and cover with cold water. Bring to a boil, then simmer for 15–20 minutes, until the potatoes are fork-tender.
  • Drain the potatoes, leaving about ½ cup of the starchy cooking water in the pot. This helps thicken the soup naturally.
  • Add the milk and garlic salt. Mash with a potato masher until you reach your desired texture, or use an immersion blender for a smoother, creamier soup.
  • Stir in most of the green onions, then taste and adjust the garlic salt.
  • Ladle into bowls and top with the remaining green onions. Serve warm.

Notes

  • Reserve the starchy cooking water — it thickens the soup so you don't need flour or cream.
  • Keep the soup at a gentle simmer once the milk is added; a hard boil can make the dairy turn grainy.
  • The soup thickens as it sits. Loosen leftovers with a splash of milk when reheating.
  • Yukon Gold potatoes work too, but they're waxier and won't thicken quite as much as russets.
