Description

The original pound cake — a pound each of flour, sugar, butter, and eggs, with no baking powder and no vanilla. It bakes in the air fryer in about 20 minutes and makes three mini loaves.

Ingredients 

  • 9 large eggs, room temperature
  • 2 cups granulated sugar
  • 2 cups unsalted butter, room temperature
  • 3 1/2 cups all-purpose flour, spooned and leveled

Instructions

  • In a large bowl, beat the room-temperature butter and sugar on medium-high for 4 to 5 minutes, until pale and fluffy. Scrape the bowl down halfway through. This step is the only leavening in the recipe, so don't rush it.
  • Add the eggs one at a time, beating each one in fully before adding the next. If the batter looks separated, add a spoonful of the flour to bring it back together.
  • Add the flour in three additions on low speed, mixing only until the last streaks disappear.
  • Grease three mini loaf pans well and fill each about two-thirds full. Smooth the tops.
  • Set the pans in the air fryer basket, leaving space around them for air to circulate. Air fry at 320°F for 20 minutes.
  • Insert a toothpick into the center of a loaf. Moist crumbs mean it's done; wet batter means it needs more time. Add 5 minutes and check again, repeating until set.
  • Cool in the pans for 10 minutes, then turn out onto a wire rack and cool completely before slicing.

Notes

Makes 3 mini loaves. Divide the recipe by 3 for a single loaf: 3 eggs, 2/3 cup sugar, 2/3 cup butter, scant 1 1/4 cups flour.
Pan size matters more than anything else here. In a full-size 9x5 loaf pan expect 50 to 60 minutes, and tent the top loosely with foil once it's golden so the center can finish. Mini loaves give a noticeably better result.
Bake to a clean toothpick, not to the clock. Air fryers vary — yours may finish at 20 minutes where someone else's takes 28.
Baking by weight: for a true pound-for-pound cake use 1 pound (454 g) each of butter, sugar, flour, and shelled eggs.
No baking powder is correct. A traditional pound cake rises entirely on the air beaten into the butter and sugar.
