Description

Air Fryer Tomato Pie --What do you get when you mix a rustic tomato galette with an air fryer? This is a crispy and flavorful dish that is perfect for any meal of the day and is a great and healthy recipe.

Ingredients 

  • 1 pound tomatoes, sliced in 1/4 inch slices
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon black pepper
  • 1 refrigerated pie crust
  • 1/2 cup cheddar cheese, shredded
  • 1 teaspoon basil
  • 1 teaspoon thyme

Egg White:

  • 1 large egg
  • 2-3 teaspoons water

Instructions

  • Preheat your air fryer to 350 degrees F (175°C) for 1-2 minutes.
  • If using a pre-made pie crust, place it in a pie dish. If you're making a homemade crust, roll it out and press it into the pie dish. Place the pie crust into the air fryer basket and cook for 5-6 minutes or until golden brown.
  • Prepare The Tomatoes: Slice the tomatoes, place them on a plate, and sprinkle with some salt, which will draw out some of the liquid. Let set for 7-10 minutes.
  • Add Your Fillings: Sprinkle a generous amount of grated cheese over the bottom of the crust and sprinkle with basil and thyme. Top with the sliced tomatoes.
  • Egg Wash: In a small bowl, crack the egg and add 1-2 teaspoons of water. Using a pastry brush, brush the crust with the egg wash.
  • Air Fry: Place the pie dish into the air fryer basket.
  • Cook: Cook the tomato pie in the air fryer at 350 degrees F (175°C) for approximately 7-10 minutes or until the crust is golden brown, the filling is bubbly, and the tomatoes are tender.
  • Cool and Serve: Remove the tomato pie from the air fryer and let it cool for a few minutes before slicing and serving.
