Air Fryer Almond Crusted Cod-This is a great and easy air fryer recipe for cod. I love a great and easy seafood recipe for the air fryer. Made with a few ingredients, you get a light and flaky piece of fish. And it’s a relatively healthy meal since it uses so little oil.

Ingredients 

  • 2 to 4 Cod Fillets,
  • 1/4 cup all-purpose flour
  • 1/2 cup Panko,
  • 2 Eggs,
  • 1 cup Ground Almonds,
  • 1 cup Grated Parmesan Cheese,
  • 1 teaspoon Lemon Pepper,
  • 1 teaspoon Garlic Pepper
  • 1 teaspoon Kosher salt,
  • 1/2 teaspoon black pepper,
  • 1 teaspoon Parsley,
  • Olive oil spray

Instructions

  • In a small bowl, mix the eggs, lemon pepper, salt, black pepper, garlic pepper, and parsley.
  • Then in another bowl, add the ground almond, panko, and Parmesan cheese, mix well.
  • Coat the cod fillets with flour, then dip the cod into the egg mixture and then into the almond mixture.
  • Set the breaded cod into the air fryer basket, set the temperature to 350 degrees F, air fryer setting for 8 to 10 minutes.
  • Plate, serve, and enjoy!

  1. Refrigerating Leftovers: Place any leftover almond-crusted cod in an airtight container and refrigerate for up to 2 days.

  3. Freezing Uncooked Prepared Fish: You can freeze almond-crusted cod before cooking. Arrange the prepared fish pieces on a baking sheet lined with parchment paper and freeze until solid. Once frozen, transfer them to a freezer bag or container and store for up to 3 months. When ready to cook, you can cook them directly from the freezer, adding a few extra minutes to the air fryer cooking time.
  4. Freezing Cooked Fish: Let the cooked almond-crusted cod cool completely. Place them on a baking sheet in a single layer and freeze until solid. Transfer the frozen pieces to an airtight container or freezer bag. Store for up to 1 month. To serve, reheat directly from frozen in the air fryer to maintain crispiness.
