Ingredients 

Chicken Drumsticks/Leg:

  • 12 chicken drumsticks
  • ¾ cup peanut butter
  • ½ cup coconut milk
  • 1 tbsp honey
  • 1 tsp salt

Spicy Jelly Aioli:

  • 1 tbsp soy sauce
  • ¾ cup grape jelly
  • 1 tbsp minced jalapeno, about 1 jalapeno
  • 1 ½ tbsp red chili sauce
  • 1 tbsp rice wine vinegar
  • ½ tsp garlic powder
  • 1 tsp coarse black pepper

Instructions

  • Preheat the air fryer to 400 degrees F, air fryer setting for 5 minutes.
  • Prepare peanut butter sauce: add peanut butter, coconut milk, honey, salt, and soy sauce to a large bowl and whisk well. Set aside ¼ cup.
  • Add drumsticks to the bowl with the peanut sauce and toss to coat.
  • Lightly spray the air fryer basket with cooking spray. Arrange drumsticks in a single layer in the basket and cook for 10 minutes. Flip, then cook for 8 more minutes.
  • Brush chicken with remaining ¼ cup of peanut sauce and cook for 2 more minutes.
  • Make the spicy jelly. Combine jelly, jalapeno, red chili sauce, rice wine vinegar, garlic powder, and black pepper—puree in a food processor or blender for 20 seconds.
  • Arrange drumsticks on a platter and serve with spicy jelly.
  • Plate, serve, and enjoy!

  • For best results, use a meat thermometer. Check the thickest part of the Chicken Leg with a meat thermometer, and the internal temperature should be 165 degrees F.
  • Let your chicken drumsticks rest, for about 4 to 8 minutes, after taking them out. This way, the juices settle to the middle of the chicken leg/drumstick. Creating a juicy and tender piece of meat.
