The first step to making your Blackstone smashed potatoes is to wash your potatoes and boil them in salted water. Cook the potatoes for about 20 minutes or until they are fork-tender.
Drain the potatoes, and heat up your Blackstone Griddle on medium-high heat. Make sure to oil your griddle well so that your potatoes don’t stick.
In a small bowl combine oil, rosemary, salt, and garlic powder. Place the potatoes in a single layer on the grill. Use your griddle spatula or a burger press to smash your potatoes onto the griddle.
Drizzle the rosemary, oil, salt, and garlic powder mixture on top of the potatoes. Cook for five minutes and then flip the potatoes over.
Sprinkle the potatoes with parmesan cheese and cook for another five minutes or until the cheese melts. Remove the smashed potatoes from the flat top and serve while still warm.
Garnish the potatoes with chopped fresh parsley or chives and serve immediately.
