  • 2 cups old-fashioned rolled oats

  • 1/4 cup pumpkin seeds, pepitas
  • 1/4 cup unsweetened shredded coconut
  • 2 tablespoons coconut oil, melted
  • 1/4 cup pure maple syrup
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries or other dried fruits, optional, for added sweetness and texture

Instructions

  • Preheat Air Fryer: Preheat your air fryer to 325°F (160°C) for a few minutes.
  • Prepare the Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, pumpkin seeds, and shredded coconut. Mix well to distribute the ingredients evenly.
