  • Preheat the Flat Top Griddle: Start by preheating the flat top griddle to medium-high heat. Ensure the surface is evenly heated before adding the catfish fillets.
  • Prepare the Catfish Fillets: Pat dry the catfish fillets with paper towels to remove excess moisture. This helps achieve a better sear on the griddle.
  • Season the Catfish: Drizzle some olive oil over the catfish fillets or spray the griddle with cooking spray. Season both sides of the catfish with Cajun seasoning, salt, and black pepper, evenly coating the fillets for maximum flavor.
  • Place the Catfish on the Griddle: Carefully place the seasoned catfish fillets on the hot flat top griddle. Make sure they are spaced out and not touching each other to allow for even cooking.
