Description

If you are doing KETO (even if you aren’t), you are always looking for something to snack on. One of the most popular air fryer recipes for appetizers is the beloved Fried Pickles. Today, I grabbed my leftover pickles from another recipe and made a KETO-friendly snack for myself.

Ingredients 

  • 20 dill pickle spears
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese

Instructions

  • Start by getting most of the moisture out. I placed them on a paper towel on my counter and let them sit for about 30 minutes.
  • In a small bowl, beat the two eggs with a fork.
  • In another, both add the almond flour and grated Parmesan cheese, mix with a fork.
  • Place the pickles into the egg mixture. After that, dredge them into the almond flour mixture, and then place them on a greased air fryer tray or a greased air fryer basket.
  • Then to crisp them up, you need to spray them with olive oil generously (or another cooking spray)
  • Set the temperature to 400 degrees F, air fryer setting, for 8-10 minutes.
  • Plate, serve and enjoy!
